Cutting out hollow calories, as you describe, is much healthier and would cause some weight loss. Losing that much weight that fast doesn't make sense unless you create a calorie deficit. (Your claim verges on an unhealthy rate of weight loss.) It doesn't sound like that was the case. Store-bought bread contains tons of that highly processed stuff you said you cut out. Unless it's home, which you did not mention.
